Diet Tomato and Cabbage Soup

1 small head cabbage, sliced thin
1 large onion, sliced lengthwise
3 carrots, diced
1 stalk celery, diced
1 large can crushed tomatoes
2 cloves garlic, crushed
Salt and pepper to taste
3 tablespoons balsamic vinegar
1 tablespoon olive oil
Water to cover

Heat olive oil in large soup pot. Put in cabbage, onion, carrots, celery and garlic.  Saute until wilted.
Add tomatoes, salt and pepper. Pour in water to cover the vegetable mix. Bring to a boil.
Cover pot and cook for an hour on low heat.
